Whether you follow a vegan, paleo or gluten-free diet, this banana pancake recipe can EASILY be modified to work for you!
This is a recipe for Crazy Simple Banana Pancakes That Fit ANY Diet! If you are following a gluten-free diet and are wondering if you can use oats, YES, you can. According to the University of Chicago Celiac Disease Center, yes — oats are technically gluten-free since they aren’t a type of wheat, barley or rye grain, the three groups of whole grains that naturally contain the protein gluten. Instead of containing gluten, oats actually have a protein called avenins. It is recommended that you select the brand of oats carefully, since cross-contamination with grains containing gluten is fairly common. Be sure to select a brand that is PURE, such as Love Grown Super Oats.
SO LET’S MAKE BANANA PANCAKES!
To make Gluten-free Banana Pancakes, you will need the below ingredients:
2 ripe bananas
1/2 cup pure oats
Note that this banana pancake recipe can be increased or decreased, depending on how many you need. The ratio is 1 egg and 1/4 cup oats per ripe banana. You can add a pinch of baking powder also, if you want them to be a little lighter.
Vegan variation is just as simple!
If you want to go Vegan, simply omit the egg and use either 1/4 cup of applesauce OR 1/4 cup of soy milk, almond milk, cashew milk, or any other “milk” that you like. For this vegan variation, I recommend adding the baking powder. It makes the texture more cake-like.
Paleo pancakes for banana lovers!
If you choose the Paleo route, then simply replace the oats with a paleo-friendly flour. I find that almond flour works well, but here is a really nice post about which type of flours are a good fit for the paleo diet.
Variations are nearly endless!
1-2 tsp cinnamon
crushed pecans or walnuts
1 – 2 Tbsp peanut butter
1/4 cup fresh or frozen berries
1 – 2 Tablespoons flaxseeds, chia seeds or wheat germ
