Want to sit down and eat together?
When raising my daughters, breakfast together was always a challenge. Pancakes flew off the griddle and were eaten while hot, so we seemed to be eating in “stages”. It was tough to find breakfast ideas for a large family to be able to sit and eat together. This recipe is perfect for that. It is also easy and can be prepared the night before and popped in the oven first thing in the morning, whilst everyone is getting showered and dressed and so on.
You can put it on the table and everyone can eat together.
How To Make Brunch For A Large Family
You will need the following ingredients:
3 medium potatoes, shredded (peeled is not necessary)
salt and pepper to taste
1 1/2 cups milk
8 oz sausage (I use Jimmy Dean)
1 med Bell Pepper (green, red or yellow)
1 small or 1/2 large onion
1 cup shredded cheese (more or less, to taste)
How to Prepare Your Brunch
Preheat your oven to 350° while you are preparing your potatoes. If you choose to peel your potatoes, now’s the time to do it. If you are not a peeler, then just scrub and dry them. cut them into chunks that will fit into your salad shooter. If you do not have one, you can get it here. It is a SUPER convenient tool and it very reasonably priced. If you do not yet have one, then do not cut up your potatoes, but use your box grater. If you do not have a box grater, you can get it here.
However you choose to do it, shred your potatoes into your greased baking pan, like so:
Spread them out and press them down firmly with a fork. Sprinkle them with salt and pepper, if you wish, and bake the potatoes for about 15 minutes. Just long enough to dry them out a bit. Longer is fine, if you want them a bit more crispy for the final dish. When they are done, you will have this:
While your potatoes are cooking, you can cook your sausage, drain it and prepare your pepper and onion. You can also add other veggies. Some examples of what you can add are Spinach, mushrooms, asparagus, or whatever you like. Once your sausage is ready, add it to your potato “crust” and spread it evenly.
Add your eggs and milk to a medium bowl, along with your pepper and onion, and mix with your fork.
Pour that into your pan, on top of your potatoes and sausage. Spread everything out, so it’s evenly distributed.
Top it with cheese. I use cheddar, but you can use whatever you like with your eggs.
Pop it in the oven and bake for about 45 minutes, or until eggs are set. You can bake it the night before, cover it with foil and refrigerate it. Then in the morning, just pop it back in a 350° oven until hot.
I like to serve it with some whole wheat toast and fruit on the side.
This is a nice, warm, nutritious breakfast that the whole family can enjoy. It is crazy simple and versatile. Many suggestions below, to fit almost anyone’s taste:
